Formerly the head of wine at Tokara in Stellenbosch, Miles is one of the greatest winemakers of the new generation. Surfer and shark dodger, he also tells many great stories. First course: Wild Seabass ceviche, citrus, pomegranate, coriander seed, grapefruit
Second course: Lightly smoked Sea trout with a crab sauce and sea, purslane, rock samphire and sea kale
Third course: Loin of venison with cherry & port, glazed baby beets and roasted turnip purée
Fourth course: Peach, apricot, gingersnap dessert
