Harbour Hotel Southampton strengthens its leadership team with a series of senior appointments across its hotel and signature restaurant.

Harbour Hotel Southampton has announced a series of senior appointments across the hotel and its signature waterfront restaurant The Jetty Ocean Village, bringing together an experienced leadership team to guide the next chapter for the five-star marina destination.

The appointments include Jorge Gertrudes as General Manager of Harbour Hotel Southampton, alongside a new leadership team at The Jetty Ocean Village: Matthew Tomkinson as Executive Head Chef, Molly White as General Manager, and Joel Langham as Restaurant Manager.

Together, the team will oversee both the hotel and restaurant operations, reinforcing Harbour Hotel Southampton’s position as one of the South Coast’s leading waterfront destinations and further elevating the dining experience at The Jetty Ocean Village.

Jorge Gertrudes, General Manager at Harbour Hotel Southampton

Jorge Gertrudes brings nearly three decades of experience in luxury hospitality to his role as General Manager at Harbour Hotel Southampton. Beginning his career with Four Seasons and Vila Gale Group in Portugal, he later moved to the UK to join Hotel du Vin, where he progressed from bartender to Deputy General Manager under the mentorship of industry figures Robin Hutson and Gerard Basset.

He subsequently joined the pre-opening team at Lime Wood before becoming a founding member of The PIG Hotels, where he played a central role in the brand’s growth and national recognition during a transformative period for the group.

Gertrudes now leads Harbour Hotel Southampton with a focus on service excellence, team development and strengthening its reputation as a five-star waterfront destination.

Matthew Tomkinson, Executive Head Chef at The Jetty Ocean Village

Leading the culinary direction at The Jetty Ocean Village is Executive Head Chef Matthew Tomkinson, a Michelin-starred chef and winner of the prestigious Roux Scholarship.

Tomkinson has built a distinguished career across some of the UK’s most respected kitchens, including The Montagu Arms in Beaulieu, where he earned and maintained a Michelin star for eight years while overseeing the hotel’s food operation.

Known for his refined yet approachable cooking style, Tomkinson brings a strong focus on seasonal produce and coastal flavours to The Jetty’s menus, celebrating the best of British ingredients with a particular emphasis on seafood.

Molly White, General Manager and Joel Langham, Restaurant Manager of The Jetty Ocean Village

Supporting the restaurant’s continued growth are Molly White, who joins as General Manager of The Jetty Ocean Village and Joel Langham, appointed Restaurant Manager.

Molly White brings over 13 years of experience in hospitality, having progressed from front-of-house roles to Restaurant Manager within The PIG Hotels. Most recently at THE PIG Hotel in Brockenhurst, she led front-of-house operations, driving record-breaking covers and increased spend per head, while maintaining a strong focus on team development and guest experience.

Langham brings extensive experience from luxury hospitality, including senior roles at Chewton Glen, where he worked across both restaurant and hotel operations. His focus on service excellence and team leadership will play a key role in delivering the restaurant’s elevated guest experience.

Together, the new leadership team will oversee the continued development of The Jetty Ocean Village as a destination for both hotel guests and visitors to Southampton’s vibrant marina district.
